pumpkin spice

hellooo pancake lovers!

i have not updated this blog in over a year. dozens of drafts later, i conclude that something is better than nothing, so here's something random for you. xo!

i made these to enjoy while watching the marathon from my window this morning. i had leftover pumpkin that i cooked and pureed for this, but i think you can get pumpkin puree (not pie filling) in a can. this recipe is a mashup of my regular pancake recipe and something i saw in men's health (why i was reading men's health is a story for another day).

1 1/2 cups whole wheat pastry flour (or all-purpose flour)
3 1/2 tsp baking powder
2 tbsp dark-brown sugar (if you want yours to be sweeter and/or you arent using syrup go with 3 tbsp)
1 tsp salt

1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground allspice
1/4 tsp ground cloves
(for these just use whatever you have/like or sub in some in some
pumpkin pie spice mix)

1 cup pumpkin puree
1 1/4 cups milk
1 egg
1 tsp vanilla extract
3 tbsp melted butter

whisk or fork up the dry. whisk or fork up the wet. fold them together with a spatula - be gentle! i think 1/4 cup is a nice size for scooping batter. also, these take longer to cook inside than regular pancakes, i guess bc of the pumpkin. to compensate, try turning the heat down a smidge. pumpkin pancakes taste sooo good with pecans and maple syrup.
